As far as I've understood, most times it's just water. Some girls have developed the "ability" to retain the liquid in their vaginas and, then, eject it at the right moment. Squirting is a genuine thing that can happen, but in porn 99% of the time it's just piss.

I don't try to fool myself and I could tell it in some scenes. When there's a long-lasting stream, it's very obvious (I'm thinking of a Kiara Cole and Katya Rodriguez scene, where the last one seems unable to stop it).
