Even in the ones that don't require vaccination proof being un-vaccinated you can look forward to forced quarantine for at least a week or two everywhere you go, and most places now arrest and put in jail anyone that breaks quarantine, that would be a whole new level of fun for you.

This is assuming that by the time you go on your trip there is a single place left that will allow a un-vaccinated person in.

I remember the first months of the virus, all those ships that no country would let them dock, My advice is to take a lot of extra food & water with you, you may be out there a lot longer than you think.

If the virus is still around your sailboat trip might be more of a nightmare than a vacation.

There will be many occasions where we are at sea for 30ish days between countries which will more than cover any quarantine requirement. I have a lethal allergy to raw eggs which means I cannot take a yellow fever vaccine, that means I'm going to have to island hop down the Atlantic Ocean to avoid South America until we cut back into Chile to navigate the Strait of Magellan.

Most places allow a negative test in lieu of a covid treatment (aka "vaccine").

I've got a proper blue water cruiser, we will be able to carry approx 18mos worth of food, we've got redundant electricity generation (solar and wind), 1200Ah of lithium batteries and redundant water makers. We'll do just fine.

Life is what you make of it, it will be a grand adventure, few to no nightmares when one is prepared.

Very nice boat but i dont think being at sea would matter, they would have no idea where you may have stopped or if you came in contact with people there or if you came in contact with people on other boats, If your entering a country with a quarantine it would still apply to anyone entering, Yes most places will allow the negative tests, for now, but that can change at any time.

How your trip goes depends on which way this virus goes, if it continues or gets worse expect a lot more problems & restrictions on your trip.

An immediate family member has been infected with COVID as a breakthrough case as they received both doses of the vaccine in the Spring.

Those breakthrough cases seem to be happening a lot more, Probably even more than they are telling us.
I'll be glad when i can get the booster shot.

There has been a report out in the UK about AZ and Pfizer only lasting around 6 months, which does make you worry a bit. At least we have 67% protection after that, but god knows how much more.
